Lahb Gai - (Spicy Chicken Salad)

Ingredients:
- 2 lbs ground chicken
- 2 garlic cloves
- ½ cup of sliced green onions
- ½ cup of sliced red onions
- ½ cup of shredded mint leaves
- 4 tablespoons fish sauce
- 4 tablespoons lemon juice
- 1 cup grounded roasted-glutinous rice (see below)
- 1 teaspoon green pepper
- 2-4 tablespoons ground dry red chilli
Preparation:
Heat some oil in the wok. Chop the garlic cloves small and fry in the oil for a few seconds before browning. Then add in the ground chicken. Cook for a few minutes until the chicken is done. Drain and allow the chicken to cool down.
Add the lemon juice, green and red onions, and mint leaves. Add in the fish sauce, and stir. You may add in more lemon juice if you wish. Add about 2 -4 tablespoons of the dried red chilli, but you may use more or less depending on how hot you like it. Finally add in the roasted rice. This dish is typically garnished with a 1/4 head of lettuce, cilantro and green beans and topped off with a sprig of mint.
*Ground Roasted Glutinous Rice*
To prepare the roasted glutinous rice heat I cup of dry glutinous rice in a wok (without oil) until it browns. Take off the heat and put into amortar & pestle or som tum. Pok pok the rice until it begins to powder.
