Pad Kapow Moo - (Fried Pork with Basil)

Ingredients:
- 200 gms mince pork meat
- 1 onion
- 1 tablespoon mushroom soya sauce
- 1 tablespoon oyster sauce
- 1 teaspoon fish sauce
- 1 teaspoon sugar
- 2 tablespoon oil
- 1 pinch of pepper
- 3 bird eye chillis (medium);5 for hot
- 3 large red chilli (medium);5 for hot
- 3 garlic cloves
- 5 kapow basil leaves
Preparation:
Slice the onion finely. Peel then pok pok the garlic and chilli with a mortar & pestle. Then fry the garlic and chilli mixture in a hot pan with oil until the garlic aroma comes out and it starts to brown. Add the minced pork and fry it until cooked, add the onion and other ingredients.
Add the basil (kapow) and a pinch of pepper. Fry for a few minutes until the onions are soft, then set aside on a serving dish.
Serve With Hot Thai Jasmine Rice cucumber and tomato slices. Also tradition with a fried egg placed on top of the rice (Khao Khai Dow)
