Pad Thai - (Fried Noodles with Egg, Prawns & Peanuts)
Ingredients:
- 8 -10 ozs flat Thai noodles
- 1/2 cup of fresh shrimp
- 1/2 cup of finely cut hard tofu
- 1/2 cup of ground peanuts
- 1 cup/small bowl of bean sprouts
- 1/2 cup of Spring onion (cut about 25mm (1") in length)
- 6 eggs
- 2 teaspoon of chilli powder
- 1/4 cup of fish sauce
- 1/2 tablespoon of soy sauce
- 1/4 cup of sugar
- 1/4 tablespoon of vegetable oil
- 2 crushed garlic
- 2 crushed onion
- 1 tablespoon pad Thai paste
Preparation:
Soak the noodles in hot water for about 3 minutes.
Heat the wok. Add the oil, garlic, onion, and tofu. Stir them well for a minute or two. Add peanuts. Stir. Add fish sauce and soy sauce. Stir. Add sugar. Stir. Add the fresh shrimps. Stir. Add eggs. Stir. Add some water (about 1/2 cup). Stir. Add the soaked noodles Stir.... Add the Pad Thai Paste, stir...and stir again or the noodles may get burnt. Add some water if necessary.
Taste. Add more fish sauce, soy sauce and sugar if needed. Take the wok off the heat. Add bean sprouts and the spring onion.
Serve with a slice of lime and ground peanuts. Delicious with dried roasted chilli or a sprinkle of chilli powder
