Khao Pad Gai - (Chicken Fried Rice)

- "Pad" meaning Fried
- "Gai" meaning Chicken
Ingredients:
- 1 lb of chicken cut into strips of about 1/2" x 2"
- 2-3 garlic cloves
- 1 teaspoon of sugar
- 1 tablespoon of oyster sauce
- 2 tablespoons soy sauce
- optional vegetables (thinly sliced longways)
- 3 cups of jasmine rice (steamed)
- 2 teaspoons of Chicken Stock
Preparation:
First cut the chicken into strips of about 2” long.
Start by heating about 4 teaspoons of cooking oil in a wok to a medium heat; add the garlic which has been crushed. Then add the chicken, keep stirring until it goes a golden brown colour. If you like, you can now add some vegetables (e.g. sliced carrot, sweet pea, or spring onion). They are best uncooked but if you like your vegetables soft it is advisable to part boil them first. Now add the soy sauce the oyster sauce and the chicken stock. Stir, add the steamed rice, stir, stir, stir, add some sugar, Stir and take off the heat.

Double the ingredients for more fried rice and refrigerate after 1 hour. Delicious hot or cold on its own or as an accompaniment.
