Tom Kha Gai - (Chicken Coconut Soup)
- "Tom" meaning Soup
- "Kha" meaning Galangal
- "Gai" meaning Chicken
Ingredients:
- 1 knorr chicken stock cube
- 4 lime leaves
- 2 inch piece lemon grass
- 1 piece galangal ("kah") – 1 inch sliced thinly
- 3 tablespoons fish sauce
- 2 tablespoons lime juice
- 2 small chicken breast, cut into small pieces
- 4 5ths tin coconut milk
- Sliced red chilli’s (to taste)
- Fresh coriander leaves (as a garnish)
- 1/2 cup of parsley
Preparation:
Heat 2 pints of water. Add the chicken stock cube and stir. Add in all of the ingredients except for the chicken and coconut milk. Bring to a boil and let it boil for 2 minutes, until the chicken is done, then bring it down to a simmer for a few minutes. Finally add the coconut milk and allow to heat before serving.
Serve the soup while still hot with some parsley as a garnish.
